Sam Adams Fall Variety Pack 2023 – It sounds like a crazy idea as my new favorite yeast product. but it’s true. Fresh beer is important, especially when it comes to forward-thinking ales like American Pale Ales and India Pale Ales.
I recently asked Jim Koch, founder and brewer of Samuel Adams, better known as the Boston Beer Company, a few questions. Samuel Adams continues to amaze me with his willingness to change and grow in the methods he creates and the boundaries he pushes. Two of my favorites have been combined into their portfolio: Angry Orchard Ciders, which makes my husband’s favorite cider, and Travel Beer Company, with a variety of flavors.

Here are some Koch’s thoughts on what makes fresh beer, how to check dates, how age affects flavor, and what types of bottles freshen your beer.

I’m really excited about the freshness because it affects the quality of our beer, and it tastes better. Think of it this way: beer is liquid bread. Most beers stay fresh for about four months after bottling, maybe three months in the case of an IPA. (Although there are a few very mature beer styles, like Samuel Adams Utopias, which are almost impossible to drink at 28 percent ABV.) All of our beers can be tasted fresh. In fact, we also take expired beer off the shelves and waste billions of dollars in beer every year.
Typically, a Sam Adams bottle lasts four months after bottling, but the box lasts 60 days after storage. But, larger, barrel-aged beers, like Cosmic Mother Funk Grand Cru or Utopia, can develop unique and interesting notes with age. On the other hand, the best beers also have a short shelf life, so we recommend enjoying them quickly. …but the point is, fresh beer tastes better.
In the late 1980’s we pioneered putting a new, legible date on all of our packaging. Each tag has a calendar schedule and a specific month set as the expiration date; Beer is illegal on the first day of that month. On cans and barrels, a clear “best before” date is printed on the bottom of the can and on the side of the barrel. In fact, when I created a new dating site that could count on our names, I hacked each name with a $10 hack saw and then overbuyed. I saw a $150 table. In retrospect, this approach seems outdated! But no one has, and to me, it’s important that beer drinkers understand the freshness of their beer.

In 2010, we began working with our wholesalers on a program called the “Freshest Beer Program,” which reduces wholesaler inventory from two months to two weeks or less and requires the wholesaler to keep beer cold. To date, we have offered this program to about 80 percent of our sales force in the country.
In terms of style, yes. As mentioned above, we recommend enjoying some beers straight away, most of which are less aged.
In terms of packaging, the brown bottle and original crown are two important features that contribute to the beer’s freshness. Brown bottles protect the quality of the beer, [while] clear or green bottles … allow light to change the profile of the flavor, and get to the exact point. It is perceived by many drinkers as having a “hazy” taste and aroma. A pre-sealed cap prevents ‘oxidation’ or allowing oxygen to enter the alcohol. Oxidation can prevent beer from tasting the way the brewer intended, distorting the flavor and aroma of hops, malts, or other special ingredients.

Through a kind of alchemy, Sam Adams manages to evoke and bottle up the frustration of the season, so when I drink Old Fezziwig, the aroma and taste evoke memories.

“It should be the epitome of holiday cheer,” said Rich Farrell, Sam Adams’ brewer. “We tried to put it in beer, and an old Fezziwig is what we did.”

Farrell read the 1995 version of Old Fezziwig, written by Sam Adams in its first year of production. He thought the researcher had nailed that line.
“It talks about some of the inspiration for beer, which comes from Dickens’ novel A Christmas Carol,” he said. “When we see the Ghost of Christmas Past, we see Scrooge’s Mr. Fezwig is throwing what I call a quick and busy holiday party.”
Old Fezziwig’s recipe hasn’t changed in 26 years, Farrell said. It starts with a blend of malts: regular malt, Munich malt, and chocolate malt. From there, brewers use an old German process to extract the compound from barley called mash decoction.

Farrell said, “I mean what you get from eating the holiday candy, the birthday cake. You get that candy, the toffee, the bread, and then you get that warm flavor.” . , and certainly an array of wonderful spices and fruits.”
After its first release, Old Fezziwig was a staple of Sam Adams’ holiday 12-bar for five years. But in 2000, seemingly out of nowhere, the store trashed the beer, pulling it out of various crates.

“We don’t like beer, because we sure do,” Farrell said. “Now is the time to increase creativity among drinkers and brewers, and we want to continue to offer our drinkers creative and innovative beer. The decoration of the box has changed over the years. This is an attempt to differentiate our drinkers especially during the holidays.”
The fury was fast and boisterous, and 12 months later Sam Adams brought Fezzewig back. Since then it has been included in holiday registries many times. We saw him again in 2019.
Last year Sam Adams made Old Fezziwig available in his Faneuil Hall slit room only for photography and collection. That was not enough for many of Weffswig’s loyalists.
